Back home, Brazilian Cheese Bread, or Pão de Queijo in Portuguese, has always been our ultimate comfort food and a staple in our family's freezer. After living in New Zealand for a few years and experiencing the Covid lockdowns, we both began to feel a deep sense of homesickness. The way we found to stay connected to our roots was through food and the process of making Pão de Queijo.
Over a period of two years, we perfected our recipe using the highest-quality ingredients New Zealand has to offer: organic tapioca starch, sour tapioca starch, fresh milk, fresh free-range eggs, parmesan cheese, aged cheddar, and smoked gouda. With its unique cheese blend, a crispy exterior, a chewy interior, and ready in 30 minutes or less, it makes for the perfect snack or side dish to pair with anything.
