It's our obsession...to create the most deliciously perfect bar in the world. We start by seeking out the finest, sustainably produced raw materials, this means using fairtrade and organic cocoa beans, cocoa butter and sugar. We bring it to our little factory in Nelson where we get crazy meticulous about our process, obsessing over roast profiles, grinding temperatures, conching times, winnowing, ageing, tempering curves, crystallisation speed and fussing over a bunch of technical stuff that spins our wheels, sprinkling a bit of kiwi magic into the mix as we go. It takes more time and effort, but sometimes the longest road home is the most enjoyable.
